Abstract
The article presents the information on the development of a functional food product of poultry meat, enriched with the deficient for most people minerals -iodine and selenium. It was reviewed the technology of insertion of the elements into the product and the method of product production. There were studied and described the nutritional and biological value of the obtained roll, its physical and chemical characteristic.
