Abstract
The article analyzes the peculiarities of the modern state of functioning of vegetarian restaurants. The problems and ways of increasing the competitiveness of vegetarian cafe "ECO-BUFFET" on the basis of analysis of the structure of services, consumers, competitors, SWOT-analysis are grounded. The comparative characteristic of individual indicators of competitiveness of a cafe with vegetarian cuisine in Kyiv is presented.
