Abstract
The biotechnological activity of amylases catalyzing the hydrolytic cleavage of starch macromolecules during deep grain processing can be intensified and regulated at the supramolecular level by various methods: the selection of biotechnological enzymes, etc. The tertiary nanostructure of amylolytic enzymes promotes the enhancement of the enzyme + starch complementarity of the processed grain.
