Abstract
The vitamin activity of a powder of mushrooms of flamulins (Flammulina velutipes) is investigated. The amount of thiamine, niacin, phenolic compounds and coumarins, calculated on the basis of 6,7-dihydroxy-4-hydroxymethyl coumarin, was determined and calculated. It has been established that the use of flumulin mushroom powder in restaurant business products will significantly expand the assortment of food products with high nutritional value and protective properties.
