Abstract
This study aim was to characterize Irvingiagabonensis pulp grown in Benin. Nutrient content results showed that the samples contained a large amount of sugar (9.54 -15.28%) and a very low protein content (1.20 - 2.21%) and ash (0.2 - 0.9). the water content and Brix degree was comparable to that of several fruits. pulp would be a good substrate for fruit production. Pulp contained several phytochemicals such as oxalates, phytates, tannins, saponins and flavonoids in the relatively high amount.
