Abstract
Contamination of foods with metals may be related to the raw material or the production processing or the environment. The ingestion of metal contaminated products is a public health problem. In order to evaluate the contamination of metal micropollutants in agbelima, lead, cadmium and aluminium were measured in six (06) samples of crude two roots cultures and eighteen (18) samples of agbelima from the same cassava roots by the spectrophotometric molecular absorption method. The results obtained showed lead, cadmium and aluminium levels respectively of 0.93 ? 0.08 ; 0.21 ? 0.1 and 329.03 ? 6.4 mg/kg for roots and 2.5 ? 0.34 ; 0.4 ? 0.11 and 366.02 ? 8.72 mg /kg for agbelima. These values exceed the normative criteria of the European Union regulations which set lead at 0.1 mg/kg and cadmium at 0.1 mg/kg. The results show a the contamination of these metals in lead, cadmium, and aluminum in the agbelima samples of agbelima after Root transformation. To ensure the safety of consumers, it is important that the cassava roots used are of the good chemical quality, and the tools of processing are well maintained.
