Abstract

Minerals are divided into macro - and micronutrients, depending on whether, in what quantities they are contained in the muscle tissue of animals. Great physiological importance of trace elements are in the human diet. The more muscle tissue mineral substances, the higher nutritional value of meat. The purpose of our research: the study of the mineral composition of the muscle tissue in sheep West Siberian meat breed in postnatal ontogenesis. Thus, we concluded that the mineral composition in muscle tissue in sheep West Siberian meat breed changes in the age aspect. According to laboratory studies, we found that virtually all minerals muscle tissue to 12 months of age slightly increased, with the exception of copper, which remains unchanged compared to neonates. The macronutrient composition of the muscle tissue is ambiguous, that is, the content of potassium and magnesium in muscles of sheep West Siberian meat breed to 12 months increased, and calcium and sodium is reduced in comparison with newborns. Therefore, the greatest nutritional value has meat sheep of the West Siberian meat breed at the age of 12 months.
