Assessment of the effect of premixes on the functionality of the Rich nectar

Abstract

The effect of various premixes intended for the enrichment of drinks on the physicochemical and organoleptic characteristics of nectar from oranges and mangoes "Rich" is investigated. The efficiency of enrichment is confirmed by calculations. Enrichment with premixes “RUVIT-4” and “CustoMix IMMUNITY” leads to the functionality of nectar for vitamins C, B1, B2, and the trace element — iron, in the percentage of dosage not less than 15%. The final selection of the optimal premix was carried out according to the results of organoleptic analysis.
