Abstract

Flour confectionery products occupy one of the largest market segments. Which includes a small content of vitamins, nutrients, minerals, dietary fiber. Undoubtedly, the task of increasing the biological and nutritional value of flour confectionery products is a priority at the present time. One such product is pumpkin seed flour.
