TRENDS OF FAST FOOD IN THE FIRST QUARTER OF THE XXI CENTURY: CONSUMER REQUESTS OF MILLENNIALS AND UTENSILS EDIBLE

Abstract
The legislative ban on a particular list of plastic products in the EU has become an incentive to green disposable tableware in the face of the growing demand for it. The article presents the results of market research and identification of the primary consumers of plastic tableware in Ukraine. The urgency of the problem of volumes of use of disposable plasticware by the enterprises of consumer cooperation of Ukraine is investigated. The development trends of the Ukrainian disposable tableware market in 2017-2019 are presented. Consumer demands of millennials in the USA and the EU are characterized based on the results of the American Consumer Satisfaction Index (ACSI). The concepts of fast food and street food are distinguished. It is determined that the understanding of fast food as "food for the poor" is an outdated stereotype. The hypothesis of the dynamic growth of restaurants in the niche of "fast food" and changes in the content of fast food as a reaction to consumer demands of "millennials" is proved. It is substantiated that the change in the content of fast food in the direction of greening causes a change in the attitude to disposable utensils: from plastic to organic, edible. The main trends in the production of organic edible appliances in the world and Ukraine in the period 2009-2019 are outlined. The results of pilot empirical studies on the use of plastic utensils in restaurants of consumer cooperatives of Khmelnitskyi мregion are presented. The priorities and arguments of the students regarding the choice of restaurant facilities were studied, the level of awareness of young people about the safety and benefits of organic utensils was assessed. The level of loyalty of students of Khmelnitskyi Cooperative Trade and Economic Institute - consumers of fast food to the prospect of additional costs for environmentally friendly utensils.
