Abstract
Pomegranate juice is a rich source of beneficial ingredients; the demand for its consumption is growing all over the world. Production of pomegranate juice on an industrial scale involves fruit pressing. The purpose of this study was to study the quality characteristics, value level of pomegranate juice produced. Pomegranate fruits are harvested by hand and mechanically processed to extract juice, which is processed using a throwing machine, a peristaltic pump, and a pneumatic press. Chemical analytical determination was performed on various juice samples. The analysis of trademark and organoleptic quality indicators of the pomegranate juice taken for the sample was carried out.
