Abstract
The present study was to formulate the Centella asiatica flour incorporated fryums by incorporation of different level of Centella asiatica flour like 5 %, 10 % and 15 % into fryums. The Organoleptic properties of the formulated fryums like colour, appearance, flavour, crispiness, taste and over all acceptability were evaluated. Among the different incorporation 10 % of Centella asiatica flour incorporated fryums were recorded the highest scores for overall acceptability.
