Abstract
Abstract Levansucrase is a fructosyltranferase that synthesizes levan and present great biotechnological interest. Its being widely used in therapeutic food cosmetic and pharmaceutical industries. Levansucrase is produced by many microorganisms such as the Bacillus subtilis Natto using the sucrose fermentation. In this mini-review we described some properties and functions of this important group of enzymes and the recent technologies used in the production and purification of levansucrase and levan.
