Abstract

This paper presents the study of the chemical composition of Jerusalem artichoke tubers on the content of sodium, calcium, magnesium, potassium, iron, copper and zinc. Based on the findings highlighted in the most varieties and forms of artichoke with a high content of macro and micronutrients for both fresh consumption and for creation on their basis of functional foods.
