Abstract
The most important strategic goal of Russia’s prosperity is to create and sus- tain a competitive market. Food is one of the key elements in an integrated assessment of the socio-economic development of society and plays an important role in the delivery of services. In order to achieve and maintain the competitiveness of catering needs well-oiled machine control, including the organization and conduct of measures to preserve their competitive position. One element of this mechanism is to evaluate the external environment, aimed at identifying factors contributing to the optimization of operations.
