Abstract
Two factors of variation of milk quality modern cow "race and season" is evaluated and compared with farming practices in a private farm, in the region of El Shatt (Wilaya d 'El Tarf). The fat content and milk protein of Holstein and Montbéliarde rose 4.83 g / l, respectively, and 3 g / l. Similarly, the fat content increased 0.76 g / l, respectively, and + 3.66 g /l.
