ANALYSIS OF RECEIVING PULPOSUS BY-PRODUCT OF PIGS AND ASSESSMENT OF ITS QUALITY

Abstract
Pulposus by-product (pork liver) was considered. The research objective ? determination of quality and safety of the cooled pulposus by-product acquired in the local markets on organoleptic and physical-chemical indexes. Relevance of this research work is that pulposus offal is a good protein source for human. It was found that liver samples are fresh on organoleptic and physical-chemical indexes ? completely conform to all requirements explained in state standard specification 32244-2013 “By-product meat processed”.
