Abstract

In the article presented, the results of research of sandy biscuits technology with addition of the developed walnut leaves powder (WLP) and flour ?Zdorovja? are shown. The possibility of using WLP and ?Zdorovja? in sandy paste semis technology is proved, so that will improve their chemical content. Studied organoleptic assessment powder from the leaves of walnut flour "Health" and semi baked sand. The optimum concentration developed walnut leaves powder (WLP) and flour ?Zdorovja? for biscuits. The content of protein, fat, carbohydrates, vitamins and minerals in ready biscuits. An organoleptic assessment baked biscuits. Defined microbiological and toxicological hazard baked biscuits.
