Abstract

Escherichia coli O157:H7 belongs to one of the virotypes producing enterohemorragic illnesses transmitted by food (food borne disease). It has been associated with Hemorragic colitis, Uremic Hemolitic Syndrome and Trombocitopenic Purple in human. The objective of this study it was to establish the presence of Escherichia coli O157:H7 in swinish tecnified explotations and bovine meat in the department of Córdoba. The study was carried out during the months of March and September 2001 at the Biological Tropical Investigation Institute (IIBT) and the Faculty of Veterinary and Zootecnic of University of Córdoba. 325 fecal swinish samples were processed 100 samples of bovine channel and 20 samples of ground meat. The microbiological protocol was carried out by standardized protocols. The results showed a frequency of Escherichia coli O157:H7 of 4.6% in swinish fecal samples in the department of gives Córdoba, 2% in bovine channels and 10% in ground meat. The results of sensitivity in Escherichia coli O157:H7, found of 100% to the ciprofloxacina, gentamicina, ampicilin sulbactam, amikacin, cefaclor and ampicilin. It was a resistance of 89.4% to the tetracycline and 21% to trimetoprim- sulfametoxasol. The work allowed to conclude that the frequency of Escherichia coli O157:H7 in fecal swinish, bovine channel and meat products for human consumption is high in the department of Córdoba
