Abstract

India has the world's largest population of livestock with nearly 190 million cattle, 69 million buffalos, 140 million sheep and goat, 10 million Pigs and over 200 million poultry. About 3.65% of Goat, 32.5% of sheep, 28% of pigs, 1.9%cattle are slaughtered every year. The reported per capita in availability of meat in India is about 1.4kg per annum, which is rather low compared to 60-90 kg in European countries. The slaughter house in India having all the treatment technologies base effluent treatment plant which constitutes the tertiary treatment system which includes the filtration and carbon filtration also disinfection by chlorine. The slaughterhouse industry is different from the traditional industry in a number of ways. Most important is the natural (and large) variation in raw material regarding quality, weight, size, fat layer and meat content etc., as a consequence of pigs being a biological material. The industry is dealing with this large variation by sorting the pigs into groups consisting of pigs with almost the same characteristics.
