Abstract

This paper is based on the application of the results obtained using scientific discipline ‘Operations Researches' – directed to the field of linear programming and network planning with the aim of analysing business operations of the company Kava Santos d.o.o whose business activities are based on the pastry production for their own needs as well as for those of their business partners. The purpose of this paper has been to maximize the income of the company Kava Santos d.o.o. by applying relevant mathematical methods in the segment which refers to the production of five different types of pastries with pre-set restrictions. The latter comprising the availability of certain ingredients as well as human resources, time necessary to carry out certain activities and their cost. The analysis of business operations has been carried out using two complementary methods which belong to the above mentioned scientific discipline i.e. the Charnes M procedure, used in the first part, and the Pert method used in the second part of the paper. In order for these methods to be efficiently applied to a specific task, the process of pastry production has been divided into separate components i.e. activities taking into consideration the time and the cost necessary to carry out each of them. Applying mathematical methods to the analysis of business operations of the company Kava Santos d.o.o., the results obtained can be used to reduce production time and cost, determine which product using the same principle of production is the most cost effective, and thus eventually ensure bigger profit for the producer and at the same time maintain the quality of the product.
