From ancient times, Stevia rebaudiana has been used as a sweetener and medicine in various regions of the world. Stevia is predicted to grow in popularity in the future, particularly in the developing natural food and wellness sectors. Stevioside production has become more prominent as a result of its numerous health advantages and high demand. For the manufacture of stevioside from Stevia rebaudiana, a variety of extraction techniques are available. Ultrasonic assisted extraction, supercritical fluid extraction, pressed hot water extraction, high speed counter current chromatographic extraction, enzyme assisted extraction, and metal salt assisted enzyme based extraction, modified supercritical co2 extraction, and so on. But the yield efficiency is the most important factor to consider. The flow of stevioside production was examined, as well as several extraction procedures and purifying methods. This review article goes through the whole stevioside production process, including numerous extraction methods and purification.
