EFFICIENCY OF SPELT GRAIN PROCESSING INTO GRITS

Abstract

As a result of studies it is found that the germ content in spelt grain for years of studies varied from 0,9 to 2,8 % depending on the variety. Among the varieties obtained by selection the variety Zoria of Ukraine had the highest germ content – 2,8 % while the indicator of the variety Schwabenkorn was 0,9 %. The germ content of other varieties varied from 1,2 to 1,9 %. Among varieties obtained by hybridization of Tr. aestivum/ Tr. spelta lines LPP 1224 – 1,7 %, LPP 3124 – 1,8 % and LPP 3117 – 2,1 % had the highest germ content. The endosperm content of varieties obtained by selection varied from 83,0 to 87,9 %. It was the biggest of varieties Swedish 1 – 87,9 % and Australian 1 – 88,3 % and exceeded the standard by 1,6–2,1 absolute percent. Among the varieties obtained by hybridization of Tr. aestivum/ Tr. spelt, only line LPP 3117 exceeded the standard by 0,7 absolute percent, this indicator of other varieties varied from 81,0 to 85,8 %. As a result of research it is found that among the varieties obtained by selection varieties Frankenkorn – 11,7 %, Schwabenkorn – 13,7 and NSS 6/01 – 15,9 % have a high content of covers which exceeded the standard by 9–48 % which indicator was 10,7 %. Varieties obtained by hybridization of Tr. aestivum/ Tr. spelt have a higher content of covers compared to varieties obtained by selection by 1,3 times which varied from 10,8 to 16,2 %. All varieties exceeded the standard. Rolled grits yield during the years of research ranges from 91,6 to 94,1 % depending on the variety. Varieties Australian 1 (94,0 %) and Schwabenkorn (94,1 %) had the highest indicator; the lowest one was of lines LPP 3124 – 91,6 % LPP 1305 and LPP 3132 – 92,1 %. The highest yield of rolled grits from spelt grain as a percentage of unhulled grain is obtained from grain of varieties Australian 1 (83,9 %) and Schwabenkorn (84,0 %). This indicator of grain of other varieties ranges from 82,7 to 83,2 %. The highest yield of rolled grits as a percentage of unhulled grain among varieties obtained by hybridization of Tr. aestivum/ Tr. spelt, had lines LPP 3218, LPP 3435 and LPP 3117 – 83,2 %. Utilization rate of spelt grain endosperm varies from 95,0 to 99,7 %. Among the varieties obtained by selection, the highest indicator is obtained from varieties Schwabenkorn – 98,4 % and NSS 6/01 – 99,7 % which exceeded the standard by 2,9-4,3 absolute percent. The smallest indicator is obtained from grain of variety Australian 1 which totaled 95,0 %. All varieties obtained by hybridization of Tr. aestivum/ Tr. Spelt, except LPP 3124, LPP 3117, have a high utilization rate of endosperm which varies from 98,6 to 99,4 % exceeding the standard by 3–4 %.
