Abstract
In recent years, Belarus has been a significant increase in capacity of the processing industry. In these conditions one of the priority directions of development of vegetable growing is the provision of vegetable raw materials capacity of the canning industry [1]. In accordance with "the Republican target program of development of vegetable growing in the Kabardino-Balkar Republic for 2010-2020" aims to ensure uninterrupted supply of the canning industry of the Republic sufficient assortment and quantity of vegetable raw materials for the production by 2020 170,2 thousand tons of canned vegetables. It is therefore the object of our research was the comparative study of mid - and late-maturing tomato varieties suitable for processing, as part of the work to ensure maximum utilization of the enterprises of the canning industry.
