Abstract
There are different layers in the vocabulary of the Southern and Southeastern dialects of the Tajik language. One of the main layers of the vocabulary of these dialects accompanied the people during their existence, are the terms associated with the names of the varieties of bread. Conceptual study of this layer of the vocabulary of these dialects is an important scientific task. This study shows that the vocabulary of this formation is closely associated with traditional values pertinent to the preparation of various cooking: necessary products for making bread, recipes for dough and bread in that process, which appeared in the customs and culture for thousands of years formed by different morphological methods. It's the common words associated with the word "bread" is the derivational basis for the emergence of difficult words and term phrases. Such suffixes as ak //-‘k, -aku, -a, -cha, -u // -gi play the important role in the formation of derived lexemes.
