Abstract
This article is devoted to the theoretical substantiation of wheat bran usage as a source of dietary fiber, vitamins and minerals in preventing childhood diseases through the nutrition. Chemical composition, energy and nutritional value of wheat bran was analyzed with the aim for the usage in the recipe for the dish "Carrot Cutlets" with different amounts of this ingredient.
