Abstract
Abstract: the article presents the results of comparative evaluation of grain and flour in varieties of spring soft wheat of Bashkir selection. Physical and chemical indicators of grain and flour of spring soft wheat of grades were defined: "Vatan 2017 dyurtyulinsky", "Vatan 2017 Elite" and "Vatan 2014".According to the obtained results of the research, a comparison of the presented varieties of wheat was made.
