Abstract
According to the strategy of economy development in Azerbaijan, a policy of production diversification in agriculture is pursued. The traditional industries are revived, new productions are being created. These also include the production and processing of olives. Despite the high nutritional and medicinal properties of olive and olive oil, the due attention was not given to this area of production in the republic until 2015. Currently, the task is to fully meet domestic needs and create export potential for the production of olive and olive oil.
