Abstract
In the article, based on the analysis and generalization of the results of scientific researches of scientists, the expediency of enrichment with iodine of restaurant culinary products has been substantiated. The use of laminaria in iodine-enriched meat cutlet technology is proposed. The results of studies on the influence of laminaria on the technological process of production of meat chips are presented.
