Abstract

The relevance of the research topic due to the need for an in-depth analysis of the quality of services provided by hotel enterprises plays an increasingly important role in managing the profits of enterprises in this sphere of economic activity. The aim of the article is to study innovations in the management of the development of hospitality enterprises, affecting the quality of service to consumers. In order to analyze and evaluate the quality of services provided by hospitality enterprises in the Poltava region, the monitoring method was used, during which information was collected on the work of the enterprise personnel using the “mysterious guest” method, that is, by directly receiving the service. The scientific novelty of the study is to justify the feasibility of simultaneously combining the use of a strategy of limited growth, growth and reduction for various departments of hospitality enterprises. As practice shows, those enterprises in the service sector achieve the best results, actively introduce innovations in the process of product production. However, the study revealed that most hotel managers do not pay attention to this direction of enterprise development and, as a result, lose their position in the market. Hotel management is concerned about the deterioration of the position of the company in its segment of hotel services and is trying to find an effective solution to the problem. The desire to withstand competition and stay in the hotel services market is the main motive for introducing innovations in the hotel. The practical significance of the obtained results lies in the study of the external and internal environment of the enterprise, which made it possible to highlight the strengths and weaknesses of the hotel business. Further research will be aimed at formulating proposals on enhancing the development of the hotel business and improving the quality of service through the use of innovations in the context of globalization and the accelerated development of the hotel business.
