Abstract
This paper discusses the introduction of lean production at the MP "Bakery No. 3 of Ryazan", within the framework of the project "Optimization of the technological process of production", is considered. The implemented system showed quite good results: labor productivity increased by 30%, the number of defects and inconsistencies in all processes decreased by 50%, the volume of output increased by 25%.
