Abstract
The article deals with the opportunities for processing of Jerusalem artichoke into powder and therapeutic and prophylactic production on its basis. The biological value of artichoke and its powder was analyzed. Technological scheme for processing of Jerusalem artichoke into powder was offered.? Along the entire chain of processing and transportation the possibility of creation of new work places was offered. The return on investment of the project was evaluated.
