Abstract
The results of experimental studies of apple’ storage in packages with high thermal inertia are represented. The influence of fluctuations of air temperature in the camera at the tem-perature of the fruit using packaging with liquid interlayers (with different thickness of the interlayers), and packaging without liquid interlayers are considered. The results of the quality assessment and determination of the mass loss of fruit during the period of storage are published.
