Abstract
The peculiarities of physical and chemical processes of cooking food from environmental moisture-containing natural products without the use of water and fats. The proposed technology of thermal processing of vegetables (potatoes, cabbage) in the new design of thin-walled metal containers with detachable heat-retaining bottom and a tight lid. Suggested recipes and technology of cooking of meat and vegetables.
