PRODUCTION AND QUALITY OF BUCKWHEAT PRODUCTS

Abstract
Currently growing population's need for new food products, which are characterized by ecological cleanliness and healthy direction. One such product is buckwheat obtained from buckwheat. When growing buckwheat do not apply chemical fertilizers, making it environmentally friendly. Ukraine is in the top three world's leading producers of buckwheat. This culture is mainly consumed in the countries where it is produced, and in recent years a new impetus to the global consumption of buckwheat gives the developed Asian countries. At present, the existing technology of buckwheat, are very complex and energy-intensive, require large amounts of equipment. The quality and yield of the finished product do not realize the potential inherent in the grain. The subject of this article is the improved technology production of buckwheat groats, which involves the following operations: cleaning the impurities from the grain, a grain fractionation into three streams, steaming stream of different particle size, stream separation into fractions, differentiation peeling mode and the control of products. The peculiarity of developed technology is the possibility to separately steam thoroughly each fraction of buckwheat: for large fraction apply more stringent regimes steaming with steam pressure 0,30-0,35 MPa and a steaming time 5–7 minutes; for small fractions apply softer modes steaming with steam pressure 0,25-0,30 MPa and a steaming time 4–6 minutes. The differential approach allows maximum preservation of term labile biologically active substances and increases the quality and quantity of finished product. On this technology provided receiving three kinds of buckwheat aligned in color and size: unground buckwheat premium selected, unground buckwheat first grade selected and small unground buckwheat. Output in the processing of grain grown in Ukraine is as follows: for buckwheat premium selected – 35-40 %; for unground buckwheat first grade selected– 25-30%; for small unground buckwheat – 4-8%. Each of the processed groats on the proposed technology has a buyer and a price. This technology will significantly enhance the interest in the processing buckwheat grains and increase public demand for the buckwheat products.
