Abstract
The peculiarities of deformation behavior of dough for bagel of products at various speeds of the application of load are considered in the work. The research objective was to define the modulus of conditional instantaneous deformation. During experimental studies it is established that at a speed of the deformation exceeding 1,5?10-3m/s bagel dough by deformation behavior comes to the Hookean linear solids.
