Abstract
The term quality is more and more present as an imperative in modern business. If you want to be competitive in the market, every company needs to be focused on quality in all segments of its business, because it is considered that the quality of products and services is the most powerful weapon of the modern enterprise. Quality is a concept that is not easy to define, but we can safely say that on relative size.
The introduction of a quality policy and quality standards in trade arising from its activities, namely it is clear that the store offers a wide range of products and services, depending on the size of the building, that number can range up to several thousand. From this it follows that there is no retail stores not consumers are not able to properly and competently perform the quality control of the goods they sell or buy. HACCP standard in the trade is used as a standard which established a system of quality and food safety.
