Storage Stability of Double Fortified Salt

Abstract
The storage affects the stability of salt and reduces its effectiveness. The present study has been designed to evaluate the effectiveness of double fortified salt under different storage conditions. Two salt samples, iodized (control) and double fortified salt (experimental)) were chemically analyzed for their shelf life in different containers like glass, plastic, zip-lock, closed polythene and open polythene for a period of six months. The findings revealed that plastic containers have maximum storage stability for iron and iodine content in double fortifies salt.
