Abstract
In this paper, this is elaborated the designing process and selection of materials for ripening chamber to provide hygienic, controlled climatic condition for ripening of fruits e.g. papaya and banana. As ripening process irreversible phenomenon which include change in tissue softening and it appearance. Banana is one of the world's mostconsumed fruit crops. Although banana being a climatic fruit, man-made process of ripening is essential in the farming and transportation of banana on a commercial scale to ensure good flavor, texture and uniform peel colour. The climate of ripening chamber helps to control on ripening process using ethylene gas with consideration of consumer health.
