Abstract

The grain of triticale can meet the modern needs diversification of finished products, the requirements for environmental safety, cost reduction and production costs. Potential of the triticale grain is not disclosed, and the optimum processing technology is not developed, despite the growth in demand for new raw materials. The grain of triticale has high cereal properties. Optimization technology of the processing of the triticale grain and barley topical issue today. Rice rolled the highest demand cereal products. These studies exploring the article processing technologies of winter triticale on rolled barley. The results of the impact studies degree peeling and regimes of water-heat treatment on yield, moisture and organoleptic quality of the finished product. Based on the analysis of scientific literature sources revealed that cereals containing peripheral parts weevil has higher quality performance compared to ground cereals, but increase their percentage worsens organoleptic properties of grains. Were considered modes of hot air at atmospheric conditions and at high pressure and proven the benefits of hot air for the soft modes. It was established that the increase in the degree of peeling significantly reduces the yield of the finished product, due to the increasing number of recorded membranes. Duration steaming has little effect on the output of cereals and tempering duration - negligible. The highest yield of grain cereals rolled triticale - by peeling the duration of 20 seconds, and the least - for the duration of peeling off and 160 under the regime of water-heat treatment ranged from 95.3 to 97% and from 76.4 to 83.4% respectively. Humidity of groats after steaming was increased directly in proportion to the degree of peeling. For steaming for 5 minutes at the highest humidity was peeling grains with a duration of 160 s and was 26,1-27,9%, and the lowest - by peeling the duration of 20 seconds and was 16,8-19,2% depending on the length of tempering. Optimum moisture grains before the rolling is 23-25%, which corresponds to the duration peeling with a duration of 100-120 with steaming 5 min and tempering 5-15min. Grain triticale that shelled during 20-60 with little culinary assessment 6, which increased to evaluation - 8.3 points for the peeling length within 120 sec and remained stable with increasing duration of peeling to 160 s. It was formed sequence of manufacturing operations for the production of cereals rolled trytykalevoyi comprising receiving pre-purified grain moisture content of 12-14%, additional cleaning, peeling (degree of removal of covers 9-11% depending on the initial moisture content), control peeled grains, steaming the pressure of saturated pair 0.015 MPa for 10 min, tempering for 5 minutes, drying to a moisture content of 23%, plyuschinnya on sledge machine with a ratio of angular velocity and high-speed low-speed shaft 1: 1 and a corrugated roller surface, drying the finished product to humidity no more than 14% control ready product and cooling.
