Abstract
Electric fields of pulsations PEF is a non-thermal food preservation system that uses short pulses of electricity to inactivate bacteria and has a limited impact on food quality attributes. PEF technology aims to provide high-quality foods to customers. PEF technology is superior to conventional thermal processing methods in terms of food quality attributes because it prevents or significantly eliminates adverse changes in the sensory and physical properties of foods. Food preservation has used a variety of nonthermal methods with the aim of preserving the nutritional properties and physicchemical characteristics of food products. The main goal is to use PEF in the food preservation process. It entails applying a high voltage to liquid or solid food that is sandwiched between two electrodes.
