IMPORTANCE OF ALTERNATIVE TYPES OF FUEL AND ENERGY FOR HOTEL AND RESTAURANT BUSINESS

Abstract

Introduction. The laws of the market require a constant search for the rapid introduction into production of the latest scientific and technical achievements, the latest materials and technologies aimed at ensuring the environmental cleanliness of structural and finishing materials used for the manufacture of design objects, the environmental friendliness of production and consumption processes, taking into account the problem of waste disposal and processing and the state of the subject-spatial environment. Progressive technologies can significantly reduce the cost of resource provision of the institution. Purpose. The purpose of the study is to generalize and systematize existing alternative energy sources, taking into account the reduction of the negative impact of the provision of accommodation services on the environment and their role for the hotel and restaurant sector, in terms of business competitiveness in Ukraine. Materials and methods. The materials of the study were theoretical and methodological developments of scientists and practitioners, materials of international and all-Ukrainian scientific and practical conferences, the legal framework for the activities of enterprises in Ukraine. To achieve this goal, such research methods as: methods of analysis and synthesis — to consider the essence of alternative energy sources; methods of statistical analysis of indicators of economic activity of enterprises and determination of the leader among alternative sources in Ukraine; methods of surveys, expert assessments to determine the status of the introduction of alternative sources of energy and fuel at modern enterprises of the hotel and restaurant complex; method of transition from abstract to concrete — when developing and justifying proposals for the effectiveness of alternative fuels. Results. The article analyzes alternative fuels and energy for enterprises of hotel and restaurant business. The attention is focused on the fact that the hotel and restaurant complex is the main component of the tourism industry of the state. The peculiarity of the organization of the hotel and restaurant complex is demonstrated, it is indicated that this is a high level of service for visitors, but their functioning requires huge energy costs and entails a significant negative impact on the environment. The main causes and consequences of the negative impact of the hotel and restaurant sector and tourism on the environment are analyzed. A marketing study was conducted to determine awareness and use of alternative sources in the hotel and restaurant business. The use of research results is possible in the hospitality sector. Discussion. Further study of the use of alternative energy sources and fuel will contribute to the introduction of strategic directions to increase their competitiveness both in the domestic and global markets. This will improve the situation at enterprises and improve the level of environmental safety of the hotel and restaurant complex.
