Abstract
Introduction. Modern socio-economic and geopolitical challenges, particularly military conflicts, pose significant risks to the stable functioning of the restaurant business. In response to these threats, it is essential to implement innovative approaches aimed at adapting business models, developing operational and strategic solutions, and optimizing management processes. This ensures the resilience and competitiveness of the industry in an unstable external environment. Materials and methods. The study employs methods of system analysis, comparative research, and case analysis to examine the main trends and challenges affecting the restaurant industry. The research is based on analytical reports, publications in industry journals, and real examples of enterprise adaptation.
