Abstract
Enzymes are gaining ground in the industrial sector due to their enormous potential, including high substrate specificity, versatility, and cost-effectiveness. They enhance industrial processes, leading to higher-quality products, greater yields, and a reduced environmental impact.
In recent years, the use of microbial enzymes has been increasing, as they offer several advantages over animal- and plant-derived enzymes. For example, microbial enzymes exhibit rapid growth, can be cultivated in cost-effective media, require less space, and can be grown in controlled and stable bioreactors.
