Abstract
Milling had also such a special importance on the period of The Ottoman Empire. The applied technology was general traditional and classical medieval Islamic technical. On the cadastral record books (Tahrir Varakası) of the Ottoman Empire, the numbers and capacities of the mills for the settlement units of all provinces, had been recorded under the name of Asiyab (The Water mill). Although there aren't any recordings about the systems which were used on the Ottoman period, it was known that mills existed around Beykoz in İstanbul. The Goksu Flour Mill which had been established on 1852 by the private property, according to the industry census at 1913 to 1915, was rented after that date. This flour mill, which had been managed by Uncuyan Apik Efendi who was one of the leading entrepreneurs of the Ottoman Empire, as being one of the early industrial buildings is so important, in terms of meeting the requirements of the breads of the Ottoman Palace.
In this article, it is aimed to be introduced this industrial establishment of the Anatolian side of Istanbul, which doesn't exist today, with the help of archive, documents and information.
