Abstract

Nira aren has diverse nutritional content and potentially processed into products with high economic value, such as isotonic drinks and sugar crystals. Quality standard is the main requirement of a product to be marketed, one of which is determined from the composition of the content of a product. The purpose of this study is to determine the content of isotonic drink products and sugar crystals with reference to Indonesian National Standard (SNI). The research used the sample of isotonic beverage product and the sugar crystals production of Aren farmer Taro Village Tegallalang Gianyar. Tests include tested levels of sucrose, minerals, Vitamin C and pH as an isotonic beverage quality requirements; levels of sucrose, ash and water content and lead contamination as a requirement of crystal sugar quality. The results showed that the isotonic drink had 0.52% sucrose content, Mineral (Ca 11.05%, F 120.3%), and Vitamin C 0.21% with pH 4.87. The crystal sugar contains 70.25% sucrose, ash content of 2.85%, and 3% water content, and no Pb contamination. Overall, the content of isotonic beverages and ant sugar meet the requirements of SNI.
